Keto recipe for baked eggs in avocado with Via Natura crispy bacon
Products for 4 portions
2 avocados
1 package (110 g) of Tandem Via Natura cold-smoked bacon
4 eggs
Salt
Pepper
For garnish:
1 tomato
1 head of red onion
Fresh coriander
1 pack of Tandem cow's milk cream cheese
Preparation
Place the bacon strips in a paper-lined baking tray. Cover with a sheet of paper and place a second tray on top for weight.
Put in an oven preheated to 200 degrees and cook for 10 minutes.
Cut the avocado in half, remove the pit and dig a little inside to make room for the egg.
Arrange the avocado halves in a baking tray, add salt and season with pepper.
Break one egg in each half of the avocado, add salt again and season with pepper.
Bake for 20 minutes in an oven preheated to 200 degrees.
Mix the carved inside of the avocado with the cream cheese, mash and add the lime juice.
Cut the chilli pepper into thin wheels and add it to the diced tomato.
Add finely chopped onion and coriander leaves and stir.
Cut a few strips of bacon into small pieces and set aside.
In a serving plate, place the avocado cream, the avocado, the tomato salsa and the bacon strips. Sprinkle the avocado with the chopped bacon and add a few coriander leaves.
