Pancake “couch” with Lukanka salami

Ingredients:

- 2 eggs,
- 200 ml milk,
- 150 g flour
- 2 tbsp. herbs (of your choice), finely chopped,
- 25 g melted butter,
- 6 pieces of Tandem lukanka salami
- cut into thin, long strips,
- 1 pack of cream cheese,
- a handful of dried tomatoes cut into strips,
- 12 arugula stalks (or other type of lettuce).
Preparation:
- Beat the eggs with the milk and 100 ml water. Add a pinch of salt. Place the flour in a separate bowl and make a well in the middle; pour in the egg mix in a thin stream while stirring constantly until the mix is uniform and smooth. Add the chopped herbs and let the mix rest for 30 minutes.
- Heat a small pancake pan (20 cm) over medium heat. Add a bit of butter and make thin pancakes (6 pcs.). Place the cooked pancakes on top of each other with kitchen paper between them so they do not stick together.
- Divide all of the sliced lukanka salami into six equal parts (for the six pancakes).
- Smear each of the finished pancakes tightly with cream cheese. At one edge of the pancake, put 1/6 of strips of the lukanka salami. Cover with 2 arugula stalks and a few strips of dried tomatoes.
- Starting from the edge with the lukanka salami strips, tightly roll up the pancakes. Remove the edges of the rolls and cut the rest into half, then each half – diagonally into two halves. Arrange the finished “couches” upright on a plate and serve.
