Tandem meatballs with bacon and spaghetti on tomato sauce

- • 250 g Tandem minced meat
- • 70 g Tandem bacon
- • 1/2 onion
- • 1 carrot
- • 2 tomatoes
- • basil
- • frying oil
- • 1 egg
- • 100 g Parmigiano cheese
- • olive oil
- • garlic
- • chilli pepper
- • butter
- • cumin
- • freshly ground pepper
- • sugar
- • 30 g dried tomatoes
- • 250 g spaghetti
Preparation
- Dice the Tandem bacon and the onion and fry in a hot pan with a few drops of olive oil until golden.
- Season the Tandem minced meat with cumin, pepper, egg, and the fried bacon and onion.
- Shape the mix into small meatballs and fry in an oil bath.
- Boil the spaghetti according to the instructions on the package.
- Sauté with butter, olive oil and garlic, chilli peppers and basil.
For the sauce: Grate the tomatoes and remove the skins. Heat the olive oil and fry the onion, carrots, chilli peppers, salt and sugar for 5 minutes. Add the grated and dried tomatoes and reduce the sauce until the water from the tomatoes has evaporated. Purée the mix. Pour the sauce in the centre of the plate. Put the spaghetti on top and arrange the meatballs on the spaghetti. Serve with Parmigiano cheese, basil, olive oil and freshly ground pepper.
